Banana Mango Oats

Ingredients:

  • 1/2 cup of Quick Oats or Rolled Oats (your preference)
  • Water(just enough to wet the oats completely)
  • 1 ripe banana
  • 1/2 of a small mango diced/cubed
  • A handful of raisins
  • A sprinkle of cinnamon

Directions:

First, fill a medium sized bowl with the oats of your choice, and pour in water until the oats are almost completely soaked. Microwave for 1 minute.


Next, mash in 1 whole banana until it is completely mixed into the oats. Then, top it off with your mango, raisins, and cinnamon!

Sweet Peanut Butter & Banana Toast

Ingredients:

  • 2 slices of whole grain sprouted bread
  • 1 banana
  • 2 tbsp of peanut butter (or your nut butter of choice)
  • 1 pitted medjool date
  • a dash of cinnamon

Directions:

First you need to take your two pieces of bread and lightly toast them. After they are done toasting, let them cool while you slice up 1 medium sized banana.


Next, slather your peanut butter onto the two pieces of toast, about 1tbsp per slice of bread. Once this is done, place the banana slices onto the bread so that they cover the slice completely.


Then, cut up one juicy medjool date and sprinkle the pieces onto the top. After this is done, add the cinnamon so that it just lightly dusts the toast. Then wah-lah! Peanut butter banana toast made to serve! This is the perfect breakfast for when you're running a little behind, or need something to fuel you up quick!

Lunch

Poor College Student Pasta

Ingredients:

  • 3/4 cup Whole Wheat Pasta
  • A handful of kale
  • 1/2 cup of marinara sauce
  • Any of your favorite veggies to stir in (I chose about 1/2 cup of corn)

Directions:

First, find a microwave safe bowl to place your pasta in. Add water to fill a little bit past the pasta line, and microwave for about 11 minutes on and off(keep checking to make sure it doesn't overflow).


After it's done cooking, drain the water into a colander and mix in and frozen veggies immediately to thaw. Then, heat your marinara sauce for about 45 seconds until warm, as the pasta will help heat it up too.


Stir in the sauce, and add in the kale.


And there you go! Quick and easy hearty pasta, perfect for a late study night or a Saturday night in!

Dinner

Kale and Sweet Potato Bowl

Ingredients:

  • 1 Sweet Potato
  • A handful of kale
  • 1/4 cup black beans
  • 1/4 cup of salsa
  • Any of your favorite veggies to add on top

Directions:

First, find a microwave safe bowl to put your sweet potato in. Microwave for about 7 minutes, poking holes into the sweet potato about half way through the microwaving process.


After it's done cooking, set aside for about 2 minutes to let it cool. After this, add in the kale, along with the salsa. Then, top off with your veggies. And there you go! Simple and delicious!
